Cherry Clafoutis

500g Cherries

60g Plain Flour

90g Caster Sugar

2 Eggs

200ml Milk

1 teaspoon Vanilla Extract

20g Butter

Icing Sugar for dusting


Preheat oven to 210C (Gas Mark 6). Lightly grease the baking dish. Spread the cherries evenly over the base of the baking dish. Place flour and caster sugar in a mixing bowl and combine. Lightly beat eggs and combine into flour. Mix in the sugar. Combine the milk, vanilla and butter, then pour into the egg mixture and beat until combined into a batter. Carefully pour the batter over the cherries in the baking dish and place in the oven until Clafoutis is golden brown. Approx. 40 minutes. Once the Clafoutis is golden brown leave to cool, then serve warm or cold, dusted with icing sugar.
